Ingredients:
- 500g frozen clams or mussels
- 1 tbsp chopped garlic
- 2 tbsp chopped red chilli
- 2 tbsp chilli paste (Nam Prik Pao) SKU:625.24
- 2 tbsp oyster sauce SKU:433.40
- 1/2 tbsp fish sauce SKU: 425.15
- 1/2 tbsp sugar
- 50ml water
- 1 tbsp vegetable oil
- A handful of fresh basil (or use frozen basil as an alternative) SKU: 220.36
Instructions:
- Prep Clams: Thaw frozen clams/mussels and rinse. If fresh, soak in water for 20 minutes to remove grit.
- Cook Clams: Boil clams for 3–4 minutes until they open. Drain.
- Stir-Fry Aromatics: Heat oil in a wok, stir-fry garlic and chilli for 30 seconds.
- Make Sauce: Add chilli paste, oyster sauce, fish sauce, sugar, and water. Mix well.
- Add Clams: Toss clams in the sauce to coat.
- Add Basil & Chilli: Stir in basil and sliced long chilli, letting the basil wilt.
- Serve: Enjoy hot with jasmine rice.
