Ingredients
- 400 g chicken breast fillet
- 120 g unsalted cashews
- 2 spring onions,
- 1 stick lemongrass,
- 1 Piece Ginger
- 2 large fresh red chillies,
- Coriander leaves
Dressing
- 1 cloves garlic,
- 3 red birds-eye chillies,
- 1 tablespoons Cock Brand Palm Sugar (SKU 417.23)
- 2 tbsp Megachef Fish Sauce (SKU 425.17)
- 1 lime juiceLion Brand Jasmine Rice (SKU 100.38)/Lion Brand Glutinous Rice SKU 100.27
Directions
- Pound garlic, chillies and Cock Brand Palm Sugar (SKU 417.23) in a mortar and pestle. Stir in the Megachef Premium Fish Sauce (SKU 425.17) and lime juice.
- Place the chicken in a heavy-based saucepan and cover with the water. Bring to the boil. Remove from heat and leave the chicken to rest in the liquid (covered) for at least 40 minutes to cook completely. Drain and shred
- Combine chicken with the spring onion, lemongrass, ginger, chilli, coriander and cashews
- Pour on dressing and toss
