Thai Fried Rice with Squid (ข้าวผัดปลาหมึก)
Ingredients:
- 1 tbsp Megachef Oyster sauce SKU: 433.41
- 1 tbsp Megachef Soy sauce SKU: 432.85
- ½ tbsp Megachef Fish sauce SKU: 425.17
- ½ tbsp Raw sugar
- ½ tbsp Megachef Dark soy sauce SKU: 432.90
- 5 Squid
- 3 Garlic cloves
- 1 Lebanese cucumber
- 1 Chinese broccoli
- 5 Cherry tomatoes
- 2 Eggs
- 1 Spring onion
- 1 Coriander
- ½ Brown onion
- 2 tbsp Vegetable oil
- 1 small bowl of steamed Lion Brand jasmine rice SKU: 100.39
Cooking Instructions:
- Prepare Ingredients: Slice onion, spring onion, garlic, Chinese broccoli, and squid. Chop coriander, slice cucumber, and prepare lime wedges.
- Cook Jasmine Rice: Use a 1:1 ratio of rice to water. For the fried rice, use steamed rice from the surface of the rice cooker.
- Start Cooking: Heat 2 tbsp of vegetable oil in a pan, add garlic, cook until fragrant. Add squid and stir-fry.
- Combine Ingredients: Push squid to one side, crack eggs on the other side, scramble. Add jasmine rice, mix.
- Flavour Infusion: Season with oyster sauce, soy sauce, fish sauce, and sugar. Stir well.
- Add Freshness: Add cherry tomatoes, spring onion, onion, and Chinese broccoli. Stir-fry until crisp.
- Final Touch: Add dark soy sauce, stir-fry for another minute.
