In Thailand, rice and fish are popular foods. One favourite is “Pla Tu” (Mackerel) served with rice. We’re adding a fun twist: fried Pla Tu with Prik Nam Pla and a mango salad with crispy anchovies.
Ingredients
For the Mango Salad:
- 1 large ripe mango, julienned
- 1 cup fried anchovies (store-bought or homemade) SKU: 619.08
- 1/4 cup each of chopped spring onions, coriander, and optional mint leaves
- 1-2 tablespoons crushed chilli (optional) SKU: 446.19A
For the Dressing:
- 2 tablespoons seasoned fish sauce SKU:425.25
- 1 tablespoon lime juice SKU:220.86
- 1-2 cloves garlic, sliced
- 1 small red chilli, finely chopped (optional)
For Serving:
- Lion Jasmine Rice, cooked SKU: 100.39
- Pla Tu or mackerel, Shallow-fried Pla SKU: 200.64
Instructions
- Prepare the Fried Anchovies: Fry anchovies in a pan until crispy or use store-bought.
- Fry the Mackerel: In Australia, frozen Pla Tu can be shallow-fried or air-fried. Once done, peel and debone.
- Make the Dressing: Mix seasoned fish sauce, lime juice, garlic, and chilli. Adjust to taste.
- Assemble the Salad: Toss mango, herbs, and anchovies in a large bowl.
- Add the Dressing: Pour over the salad, toss gently, and garnish with extra herbs and chilli if desired.
