Ingredients:
- 150g Australian Beef (Rump steak)
- 1/2 tbsp chilli flakes SKU: 446.19A
- 1 tbsp fish sauce SKU:425.17
- 1 tbsp lime juice SKU:220.86
- 1 tbsp shallot or red onion (sliced)
- 2 kaffir lime leaves (sliced) SKU: 220.67
- 1/4 cup chopped coriander
- 1/4 cup chopped spring onion
- 3-4 mint leaves
- 1 tbsp toasted glutinous rice powder SKU:100.27
- 2 cups Lion Glutinous Rice SKU:100.27
- Lime wedge & julienned chilli for garnish
Instructions:
- Prepare the Glutinous Rice: Rinse the rice until clear, soak for 4+ hours, then steam for 20-30 minutes until soft.
- Make Toasted Rice Powder: Toast glutinous rice in a dry pan, grind into a fine powder once golden.
- Prepare the Beef: Finely mince the rump steak.
- Mix Salad: In a bowl, combine minced beef with fish sauce, chilli flakes, toasted rice powder, herbs, and lime leaves.
- Serve: Arrange steamed glutinous rice on a plate, place the salad on top.
- Garnish: Add lime wedge and chilli for extra flavour.
